Our mission here at Restaurant shua is to showcase and highlight Vietnamese cuisine in a way never seen before. Rarely do you ever hear of “fine dining” Vietnamese restaurants and SIX of them have a MICHELIN star, with only ONE in the entire USA. We’ve made it our goal to change that, to let people know that Vietnamese food is and can be so much more than just bowls of phở, vermicelli noodles, and salad rolls. Why does it always need to be seen as a “cheap” takeout cuisine?

Using the tasting menu format and utilizing techniques we’ve learned working in high end restaurants, including MICHELIN-starred establishments and under James Beard Award-winning chefs, we look to innovate and push Vietnamese cuisine to new heights. But, we can’t do that without your help. Whether you support us by attending our pop-up dinners or through these donations, it all brings us one step closer to making our dreams a reality.

Imagine a small, intimate Vietnamese restaurant both farmer-and-chef-driven, utilizing only the best of seasonal local product, while also highlighting incredible ingredients fresh from overseas, focusing purely on creativity and maximum flavour. The highest level of service, focused solely on delivering the greatest guest experience possible. Housing the best wines from around the world. This is our goal.
